We have sourced this Northern Italian variety (which is native to the Trentino Alto-Adige region) from our good friends at Wirrega vineyards near Bordertown in the Limestone Coast. This region is further inland and north than our own vineyards so it produces fruit with a rich fruit profile and a full bodied palate.
2016 was a steady and warm growing season. The additional heat during the growing season is responsible for the depth and structure of the tannins in this wine. The winemaking brief was to respect and enhance the natural characteristics of this variety. Fermentation on skins for 10 days was followed with maturation in a combination of new and old oak for 16 months.
Enjoy this beautiful variety with a fennel and salt dusted slow cooked pork belly with a five spice and plum reduction.
